To savor the seasonal flavors, we use premium ingredients sourced directly from France, such as Challans duck, Bresse chicken, foie gras, truffles, and Guérande salt, combined with vegetables from our own garden and fresh local produce. These are crafted into exquisite French dishes by our French chef, who hails from a two-star restaurant in the UK. Enhancing these culinary delights is the owner's carefully selected French wine collection. The owner, with experience in wine selection for famous Hotel parties and as an author of wine books, personally sources wines directly from distributors. Please take your time to enjoy our carefully curated wines and our proud dinner offerings. ― 24-hour virus sterilization for all guest rooms! ― At Troimelai, we have installed safe, domestically produced ozone sterilization devices in all guest rooms, which are also used in medical settings to prevent secondary infections. All dishes are prepared with carefully selected fresh and organic ingredients! In the backyard of Troimelai, there is a 300-tsubo private farm. The chef personally nurtures the crops from seedlings. Grown with safe and secure pesticide-free natural farming methods and minimal organic fertilizers, the vegetables retain their original flavors. Additionally, as they are harvested just before cooking, they are incredibly fresh, and even we are amazed by their deliciousness! Long before terms like "slow food" and "LOHAS" became popular, we have been committed to natural practices in everything from ingredients to cooking. Meats and salts are directly imported from France, and live lobsters are flown in from Canada. Using only carefully selected fresh and safe ingredients, we provide a "blissful dining experience."

    Introduction of Hakuba Troimelai and the owner's thoughts

    The car that left the national highway and entered the mountain path eventually took a road through the grove.
    You can hear the chirping of birds, but what is the name of that bird?
    The scent of the air changes, and as the temperature of the wind hitting your cheeks drops slightly, you soon see a Western-style building standing in the grove.
    When you stop the car and walk through the trees, the white walls and the aged pillars make you forget you are in Japan,
    giving you the illusion that you are in old Europe.
    This is the auberge, Traumerei, nestled in the beautiful forest of Hakuba Village, Nagano Prefecture.
    Since its opening in 1981, Traumerei has been offering genuine French cuisine and perfectly paired wines to many guests in the clear air of Hakuba.
    The cuisine of Traumerei, which makes full use of seasonal ingredients, is well-received by first-time visitors and regular patrons who have been coming for years.
    Furthermore, the air and water nurtured and refined by the mountains of Hakuba undoubtedly support Traumerei's "star-worthy" cuisine.
    It takes about 10 hours by plane to France. However, some may find long flights exhausting.
    For such people, Hakuba can be reached by car or train.
    If you wish to taste French cuisine, flying to France is a good option, but please visit Traumerei.
