About Food Allergy Accommodations
To help guests with food allergies enjoy their meals safely, we have established the following policy.
■ As we use the same cooking equipment and tableware, we cannot guarantee the complete removal of allergens.
● We will accommodate the following allergens as much as possible: eggs, dairy products, shrimp, crab, buckwheat (soba), and peanuts.
● We cannot accommodate wheat or soybeans, as they are essential ingredients in local Shinshu foods such as miso and soy sauce.
● We cannot accommodate allergies to ingredients essential to Japanese cuisine such as bonito stock (katsuobushi dashi) or kelp stock (kombu dashi).
● We cannot accommodate guests with allergies to all types of fish.
